Southwest Chicken Rice

 1 lb boneless skinless chicken breasts or tenders cut into small pieces
 1 tsp Montreal Chicken seasoning
 salt and pepper
 ½ tsp olive oil
 1 cup white rice uncooked
 2 tomatoes diced
 8 oz tomato sauce
 1 cup water
 ½ can corn
 ½ can pinto beans
 1 chives, sliced
Toppings
 ½ cup shredded Mexican cheese
 sour cream

Cut the chicken into 1" pieces. Season with salt and pepper, Montreal chicken seasoning and red pepper flakes.

Heat on medium high heat and coat pan with olive oil.

Add the seasoned chicken and cook until it is no longer pink.

Stir in the uncooked rice, tomatoes, tomato sauce, corn, beans and water. Bring to a boil then cover.

Reduce heat to low and cook for 10 minutes or until the rice is tender. Stir, re-cover and cook an additional 10 minutes.

Add cheese to the top and turn off heat, re-cover for 5 minutes until the cheese melts. Add sour cream and chives.
