 3 tbsp olive oil
 1 small French bread or boule, cut into 1 inch cubes (6 cups)
 1 tsp kosher salt
 20 cherry tomatoes cut in half
 12 basil leaves
 3 tbsp capers, drained
For the vinaigrette
 1 tsp finely minced garlic
 ½ tsp Dijon mustard
 3 tbsp Champagne vinegar
 ½ cup olive oil
 ½ tsp kosher salt
 ¼ tsp ground pepper

In a large saucepan, heat the oil. Add the bread and salt and heat at low to medium heat for 10 minutes, tossing frequently, until browned.

Mix all the ingredients together for the vinaigrette.

Mix the tomatoes, basil and capers in a large bowl. Add the bread cubes and vinaigrette. Season with salt and pepper. Toss the salad.
