Ketchup Fried Rice

Ketchup Fried Rice

 2 tbsp ketchup
 2 tsp soy sauce
 2 large eggs
 2 tbsp olive oil
 2 scallions, chopped
 2.80 oz ham, chopped
 12.70 oz cooked rice (about 2 cups) - Day old leftover rice works best

Mix the ketchup and soy sauce in a bowl and set aside.

Heat a skillet on medium-high heat with 1 tbsp of olive oil. Pan fry the eggs, sunny side up. Transfer to plate.

Add another tbsp of olive oil. Stir fry the scallions and ham for 1 to 2 minutes.

Add the rice and stir fry, breaking up any big clumps.

Drizzle the sauce over the rice and mix thoroughly until the rice turns reddish in color.

Serve with fried egg on top.
