Coleslaw

 8 cups shredded red cabbage
 ½ sweet onion thinly sliced
 3 carrots shredded
 ½ cup mayonnaise
 2 tbsp red wine vinegar
 2 tbsp dijon mustard
 ¼ tsp salt
 ¼ tsp black pepper

In a large mixing bowl, toss cabbage, onion and carrots together.

Stir in mayonnaise, red wine vinegar, mustard, salt and pepper until mixed well.

Cover and refrigerate for 1 to 2 hours before serving.
