 1 large egg
 ½ cup finely shredded mozzarella
 non-stick olive oil cooking spray
 raspberry
 blueberry
 maple syrup

Preheat the waffle maker.

In a small bowl, whisk the egg and mozzarella cheese together with a fork.

Spray the waffle iron with non-stick cooking spray.

Pour half the egg mixture into the waffle iron and cook for 2 to 3 minutes.

Remove waffle and cook the remaining batter.
