Avocado Caprese Chicken Salad with Balsamic Vinaigrette

Caprese Salad

 1 boneless skinless chicken breast
 salt and pepper, season to taste
 1 avocado, sliced
 6 cups fresh spring mix salad
 ½ cup cherry tomatoes, halved
 ¼ cup fresh diced basil
Balsamic Vinaigrette
 1 garlic clove, minced
 1 tsp dry basil
 1 tbsp dijon mustard
 1 tbsp lemon juice
 ¼ cup balsamic vinegar
 ¼ cup olive oil
 salt and pepper to taste

Mix in a small bowl. garlic, dry basil, dijon mustard, salt and pepper. Slowly add in olive oil, whisking the entire time until there is no more oil and vinegar separation. Set aside the vinaigrette.


Set grill to medium high heat and cook chicken breast for 5-6 minutes each side until no more pink.


In a large salad bowl, mix avocado, tomatoes, basil and chicken.


Serve with balsamic vinaigrette.
